A satisfying and impressive meal can be made with this dish, which boasts a symphony of flavors and textures. The salmon is infused with the vibrant taste of lemon and garlic, and the roasted vegetables add a delightful sweetness and crunch. It's both healthy and delicious.

  • 4 salmon fillets
  • 2 lemons, zested and juiced
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/4 cup fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 medium zucchini, chopped
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 red onion, sliced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. In a small bowl, whisk together lemon zest, lemon juice, garlic, olive oil, parsley, salt, and pepper.
  3. Place salmon fillets in a baking dish and drizzle with the lemon garlic marinade.
  4. Toss zucchini, bell peppers, and onion with olive oil, salt, and pepper.
  5. Arrange the vegetables around the salmon in the baking dish.
  6. Bake for 20-25 minutes, or until salmon is cooked through and flakes easily with a fork.
  7. Serve immediately with roasted vegetables and any remaining marinade.

  • For an extra zesty flavor, add a pinch of red pepper flakes to the marinade.
  • You can substitute other vegetables for the zucchini, bell peppers, and onion, such as asparagus, broccoli, or Brussels sprouts.
  • If you don't have fresh parsley, you can use 1 tablespoon of dried parsley.
  • To check if the salmon is cooked through, insert a fork into the thickest part of the fish. It should flake easily and be opaque in color.

Enjoy this tasty and healthy meal!
